Homemade Beef Jerky as a Gift
By Kelly · Updated 2026-10-17
Savory, protein-rich gifts are a practical alternative to traditional sweets, particularly for the men in your life who prefer snackable, shelf-stable foods. Homemade beef jerky allows you to control the ingredients and salt content while creating a premium gift that is significantly less expensive than store-bought artisanal brands.
Preparing the Meat for Drying
Classic Black Pepper Beef Jerky
Adult · 8 hours (includes marinating and drying) · about $25 for 1 lb of finished jerky
- 2 lbs eye of round, top round, or London broil roast
- 1/2 cup low-sodium soy sauce
- 2 tbsp Worcestershire sauce
- 1 tsp liquid smoke
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp coarsely cracked black pepper
- Gallon-sized zip-top freezer bag
- Two wire cooling racks
- Two large rimmed baking sheets
- Paper towels
- Place the meat in the freezer for 60 to 90 minutes until firm but not frozen solid; this makes thin slicing easier.
- Using a sharp chef's knife, trim all visible white fat from the exterior of the meat to prevent spoilage.
- Slice the meat against the grain into strips approximately 1/8-inch thick.
- Whisk the soy sauce, Worcestershire, liquid smoke, and spices in the freezer bag, then add the meat strips and massage to coat.
- Refrigerate the meat for at least 6 hours or overnight.
- Preheat your oven to 170°F (75°C) and line baking sheets with foil, placing wire racks on top of the foil.
- Pat the meat strips dry with paper towels and arrange them on the racks without overlapping. Bake for 3 to 5 hours until the jerky is dry and firm, but bends slightly before breaking.
- Remove from the oven and let cool completely on the racks for at least one hour before handling.
Safety note: Ensure your oven stays at a consistent 170°F. If your oven's lowest setting is higher, prop the door open slightly with a wooden spoon and use an oven thermometer to monitor the temperature. The USDA recommends pre-heating meat to 160°F to ensure any bacteria is destroyed.
